Is Grilling Killing?

As we ready again for celebrating several summer holidays many of us will be participating in one of the all time favorite "rituals" of cooking , the traditional Barbeque and cookout. Most of us have bitten into a nice char-grilled  juicey burger or steak  deliciously oozing with barbecue sauce. As we "savor the flavor" of the spicey sweet "Q"  sauce , the majority will not be thinking of the amount of time we leave the meat on the grill and it's cumulative  affects of the  "blackened" material or the soot and smoke that lingers in the air from the fat burning off the juice. Most of us are laughing and joking and having too  much fun  rather than take a few minutes to turn the meat over timely or slow cook it  by giving it enough time to simmer. One or two of us will forget the drip pan collecting the grease run-off that is seaming with  potential toxins in it.
Most of us have heard that over-cooking or "blackened" food creates toxins that are carcinogens that can cause colon cancer by the release of free oxygen radicals,free radicals, and oxidation- perioxidation occuring from overcooking meats.But recent studies by the National Cancer Institute has found  out that the fat that is  cooked off from grilling  meats creates  a carcinogen called Poly-aromatic Hydrocarbons(PAHs) . They've also discovered that the protein in red meat and white meats such as chicken , fish and sea foods can be morphed by the excessive heat. The changes in the protein causes chemicals called Heterocyclic Amines(HAs) which also can cause cancer.

The NCI has found a relationship with both breast and colon cancer as well as  prostate and stomach cancer among other types of cancers  caused  due to over heating foods. Grilling, barbecuing,  and pan searing are also related to creating these chemicals from  super heated foods.

Grilled foods can be avoided from becoming your  own worst enemy by pre-cooking foods  to cut down on the time you grill it. Use lemon or other types of fruit marinades or olive oil  to cook in with the meat. Use more fruits or vegetables on the "barby" with the meats as a kebob . Have a drip pan to reduce the soot that flies back in your face with harmful PAHs. Cut up the meat into smaller pieces to cut down on the time  of cooking as well as cutting off the excess fat of the meat. Do not let your meat become blackened. Cook on top of tin foil if you don't have a drip pan. Always clean your grill after use and before firing it up again. Alternative methods of  cooking such as poaching, roasting, baking, pan stewing and boiling helps reduce production of HCAs and PAHs. Some studies have shown that CLA(conjugated linoleic Acid)  can inhibit cancer caused by PAHs. The exact amount of CLA is still to be determined exactly.

Don't forget that heavily smoked foods, overly salted foods particularly pickeled with Nitrates which have been associated with stomach cancer. Pickled foods are particularly fond of in in the Asian countries like Japan.

But, always remember it is the time limit of cooking, the temperature of cooking, the method you utilize to cook at as well as the types of meats you use that are seemingly related to  the chances of acquiring cancer.

How Antioxidants Work to Fight Disease

The media and commercial press are bombarding us with many messages on just what are anti-oxidants and how exactly do they work in the body. The culture today has transformed into an automated world where we are only satisfied with or only have time for fast foods, fast drinks, and a fast life. It's time to slow down a minute or two and count how many "toxic hits" our body's system must be accumulating daily.



It starts at the rush in the morning, we stuff ourselves with high sugar high caffienated drinks and maybe a piece of white toast adding to the adrenal stress already started by the food's production of nervous energy scrambling our brains. We are already worn down before the day begins.



The smog from exhaust and other emissions in the drive begin to be inhaled. Office spaces are bombarded much today by "Sick Building Syndrome" toxins from anything from mold, mildew, carbon minoxide or older buildings with asbestos that has not been removed.



The fast pace of the day hurredly comes upon us and we become lost in a world where most of us are sedentary for hours cramped in a space perhaps without windows and only re-circulated air. Let's hope our co-workers wash their hands everytime and turn away when they cough and sneeze. We don't H1N1 to add to it.



Maybe that ten minute water cooler break will allow the circulation in our legs to flow better so emboli won't be thrown and allows the carpal tunnel to stop spasming. If the muscle spasms in the shoulders(torticolis) could just stop a minute when you bend down at the desk top you could make it through the day, but it doesn't so , just pop down a couple acetominophens.



It's lunchtime and that mad dash to the car to the quickest food stand or fast food restaurant with colleagues commences. Only if that red light could speed up and that old pick-up would get out from in front you could get there faster. You can't tell if the gnawing pain in your tummy is that ulcer or the hunger you're trying to extinguish.



Ok, 15 minutes to slam down something that won't take too long to get back. Oh that triple-decker pattie and fries sounds good. Down the hatch , here's looking at you. Ok, back at the desk after traffic. Did the guys in the commissary enjoy the stroganoff any better? Oh, well , I'll just get some water from the fountain along with some seltzer and it'll all be better. Right ?This is a typical scenario that most of us face daily without thinking about it.



THE DAILY POISONS WE FACE

Today, we are letting the pace of the culture get the best of us and letting others decide what are healthy choices for or own metabolism. The food today is too effected by antibiotics, estrogen, growth hormone, genetic modification, insecticides, herbicides, pesticides, micro-waved, irradiation, aspartame, saccharin, HFCS( high fructose corn syrup) MSG, HCAs(heterocyclic amines), acrylimide, artifical dyes, chemical preservatives, chemical food coloring PAHs (polyamino-hydrocarbons), fast foods, smoked food and trans fats.



Our beverages are filled with as many chemicals such as our public water which is filled with chorine, flouride and numerous other spillages from raw sewage , expired drugs , chemical plant emissions and factory pollution.



ENTER ANTI-OXIDANTS

Anti-oxidants work opposite to what the toxins named above work. The toxins are oxidizing agents that can create oxygen free radicals in a process known as peroxidation(oxidation of poisons and toxins). These toxins can destroy or mutate DNA and cause chronic disease, immune disorders or cancer. Anti-oxidation is the process which this toxic process can be prevented or reduced severely. Promote Your Metabolism Based on Your Metabolic Type




It has been assumed by many commercial and even academic dietary experts that all diets and dietary agents are universal. That is to say that when a new diet or dietary supplement comes out it is as if that "one" method can be utilized the same by everyone.

Before we get into the three primary metabolic types , we need to understand a little bit about metabolism. Because of this rapid rate of metabolism they will require more dense calories and perhaps boost snacks inbetween. Dense calories are not just meats. They also include protein sources from soy, whey, casein, brown rice, lentils,beans and lacto-proteins(dairy).

The slow metabolic individual is seen often in the diabetics with type II diabetes or those with the metabolic syndrome( insulin resistance, heart disease, high blood sugar, over-weight or obese). They tend to accumulate calories (anabolic-type). Control of appetite and focusing on more calories from complex carbohydrate sources such as fruit, vegetables and fiber becomes more important for this group.

The 3rd group with "mixed-variable metabolsim" are what the majority of us in our "fast food -fast paced" culture probably fit into. These are people who work the grave-yard shift or more than one job, doctors on-call for 36 hours straight, partiers and students who do " all-nighters" and let's not forget those who get the majority of their calories from fast foods, junk foods, genetically modified, irradiated, canned, smoked, herbicide-insecticide-herbicide treated, estrogen, growth hormone, aspartame laden, HFCS, MSG, artifically dyed, chemically preserved, PAH, HCA,high trans fat, acrylimide laden foods.

To add to that , the mixed -variable type doesn't have as much time to let the body rest, sleep, eat properly , get "Nano-Nutrition", leisurely exercise, has short lunch breaks and longer work hours.
